Volkman 212

Last weekend we helped move my sister out of Judson.  She's done with school for the year, lucky girl!  The same day we moved her was the day of graduation.  Excited seniors, caps and gowns in tow, were scurrying around the Volkman lawn, heading toward the ceremony.  I remember that day, when it was my turn to be a graduate.  I remember not really caring about the ceremony or that my cap made my curly hair stick out like Bozo the clown (I ended up just pulling it back, opting for the bald look instead of the disturbing clown look).  Anyways, what I really remember feeling was sadness.  The end; a feeling of being cut off too soon.  Sure the future was bright, but what I wanted was the past, and I wanted it only with three other girls, my roommates.  I wanted more time in our tiny apartment; Volkman 212.

I found the following writing in one of my journals from my senior year of college  It's so fitting for this time of year, this graduation season.  So Britt, Les, and Amy.........I miss living with you girls like crazy and I miss us all together!  So here's to you, brown bag apple pie, Grey's, the legacy of our quote book (I wish I had it here to choose one), and to a promise of reuniting soon.  Love you girls!!

Volkman 212

We have a coat rack in our room and right now I’m looking around and seeing three coats tossed over the arms of the couch.  We have a shoe bin and still there are countless pairs of shoes and boots lying around, ready to trip their next unsuspecting victim.  We have plenty of bookshelves yet there is a mini library cluttering up the tabletop, desks, the TV stand - anything with a flat surface.  I could go on.  The mess is everywhere - dirty clothes and towels on the floor, used dishes left sitting in every room, hair dryers and curling irons left plugged in and sitting on the stove top.  Who knew an oven could double as a vanity?

I guess my roommates and I have trouble putting things in their correct places.  It doesn’t sound like it, but it’s a challenge to put things back where they came from.  It gets overwhelming sometimes living in a mess.  We try to be neat, we do pick up, but the next day things get used again and it ends up looking the same - cluttered and messy.  The truth is I really don’t mind all that much.  We don’t focus on the mess.  It’s actually almost comfortable; it’s lived in.  It’s me and my very best friends and we’re not perfect, or neat, or even reasonable at times, but we’re here; this is our room.

If you want to come and visit we’ll welcome you in.  You’d probably be grossed out by the messiness, but you’d soon forget about it.  You’d probably be laughing because we are funny!  Darn funny actually.  We laugh a lot, we also get mad, and yell, and cry sometimes but we are all always here.  We know each other inside and out.  We can tell what someone else is thinking just by looking at her.  We are mind readers.  We finish each other’s sentences, we say the same thing at exactly the same time and then play an immature version of jinx.  We live together and our messes come with us.  And it’s okay.  It’s good.  It’s how we do it.

A place for everything and everything in its place?  I don’t think so.  That’s not how life is and that’s not how we are.  Remember it’s hard to put things back where they came from.  I don’t know what we’re going to do when each of us has to go back where we came from.

Nesting, Waiting, Laughing....

My house is probably as clean as it's ever been.
Dishes- done
Floors-  vacuumed, once by me and once by Jason (both on the same day, don't ask me why)
Toilet- scrubbed and bathroom cleaned
Meals- cooked and in the freezer ready to go along with batches and batches of four different types of cookies (thanks mom!)

Everything is organized and in its place and ready to go!  There's just one thing missing...........

Jason and I both agreed that we wanted to give this baby all the time we could to let him come on his own.  And that's what we're doing, but it's hard to wait!  My midwife is giving us until Wednesday morning.......officially two weeks late!  We'll see......we are really praying he will come before then, but if not we'll be ready to get things started.

In the meantime, I thought today would be a good day to share some things of a more lighthearted nature.  We're trying to keep things positive and upbeat around here!

During my junior year of college there was a brief time when I used the picture below as my facebook profile picture.  It’s just a ridiculous photo and for some reason I felt the facebook world needed to be subjected to it.  I received many comments on this picture, including one from my friend Jason Marshall.

I think this is just too funny!

Chicken Enchiladas with Green Chili Sauce

Curb your craving for Mexican food with these amazing enchiladas!  If the green sauce doesn’t scare you away these could become one of your favorites.  I know I’ll definitely make them again, both Jason and I LOVED them!

Green Chili Sauce
1 cup corn
1 4oz. can green chilies
1 cup fresh cilantro
1/3 cup heavy whipping cream
salt and pepper

Pulse in a food processor until smooth.  I used a blender and it worked just fine.  Set aside for later use.

Filling
2-3 chicken breasts, boiled and cut up
1 T olive oil
1/3 cup chopped green pepper
1/3 cup chopped onion
1 clove garlic, minced
3/4 cup salsa
2 tsp chili powder
1 ½ tsp cumin
1 tsp oregano
salt and pepper
shredded cheese- as much or as little as you like

In a frying pan sauté green pepper, onion, and garlic in olive oil until cooked.  Add chicken, salsa, and spices.  Heat through.

Assembly
You will need 6 large flour tortillas or 10 small ones; I used small ones.  Grease a 9x13 baking dish and preheat oven to 350 degrees.

Spoon chicken mixture down the middle of a tortilla.  Sprinkle with cheese.  Roll and place seam side down in the greased baking pan.  When finished spoon green chili sauce on top of each enchilada.  Sprinkle all with cheese.

Cover pan and bake for 30 minutes.  Uncover and bake for an extra 5-10 minutes or until tops are golden.

Make up some Spanish rice and black beans to serve as a side.  Top with avocado and cilantro!

A boy......A BLOG is born!

So it's true, this blog is born out of a son who is refusing to be!  I'm five days past my due date and while waiting for this little stinker to come meet us, I've been filling up my time with cooking, baking, and a few other creative projects that are still in progress.

Instead of keeping these creations to myself, I thought I'd share and maybe even be able to inspire a few folks who are looking to tap into their inner artist, in whatever form that may be.  My goal with this blog is to post recipes, thoughts, ideas, photos, maybe situations from the day that just make me laugh or insightful words of wisdom wherever I happen to pick them up!

I realize I'm starting this blog probably at a very inopportune time.  The reality of keeping it up may be pretty bleak, especially after Kole is born......life will get jam packed, but I'm up for the challenge.  After all, a full life is one worth sharing.  I look forward to doing just that!

Dark Chocolate Mocha Cake

What better way to kick off the new blog than by sharing a chocolate cake recipe?  This one is a real winner too.  It's got the perfect amount of coffee taste mixed with bittersweet chocolate, an addictive combination if you ask me, so proceed with caution and make sure you have plenty of friends on hand to help you enjoy this cake!

*I cut this recipe in half and we still had plenty.

 CAKE
2 cups dark brown sugar, packed
1 3/4 cups flour
3/4 cup cocoa
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
1/2 cup melted butter
 2 eggs
 1 cup milk
2 tsp vanilla
1 cup strong, hot coffee

Preheat oven to 350.  Grease and flour two 9 inch round pans.  Stir dry ingredients together.  Add melted butter, eggs, milk, vanilla and mix for 2 minutes with whisk.  Pour in hot coffee and mix.  Pour into baking pans and bake for 35-40 minutes.  Cool for 20 minutes before removing.

GANACHE (for in between the layers)
1/2 cup dark or bittersweet chocolate (4 oz)
1/2 cup butter

Melt together in microwave for 30 second intervals and stir until smooth.  Arrange first layer of cake on plate, pour half of chocolate over cake.  Place second layer cake on top.  Pour the rest of the ganache on top of the cake.  Set cake in the fridge or freezer to harden the chocolate.

FROSTING
1 cup heavy whipping cream
1/4 cup sugar
1 tsp vanilla
1/2 cup cocoa
1 tablespoon very finely ground coffee beans

Beat cream, sugar, vanilla until peaks form.  Add cocoa and coffee beans and beat until stiff.  Frost completely cooled cake.

* Make sure to store the cake in the fridge
